How do I do this I am getting stuck because I’m not understanding how the Al3+ ion is not just taking one H and leaving the rest as OH like every other problem I have done

Indeed, sometimes ions can dissociate into more than simple H+ ions! I recommend that you take the time to spell out the full chemical equation. That should help you write down the acidity constant and infer what the pH is. Remember:
$$ pH = -log[H^+] $$
