The goal of the swimming pool example is to find at what distance the observer has to be located to see both kids in the pool. The only rays that matter for this example are the rays that reflect off the extremities of the pool and bounce into the eye of the observer. This is why we only need to trace the reflected rays.
In the example with object S, we need to extend the reflected rays back to the image point. However, in order to know where the reflected rays are in the first place, one needs to draw the incident rays. Thus, a few more rays need to be drawn.
