Bite-Sized Santas

These mini Santas made out of strawberries and cream cheese filling are deliciously festive, fun, and easy to assemble. Made with just four ingredients (strawberries, cream cheese, a little powdered sugar, and vanilla), these no-bake Christmas treats are a hit with kids and adults alike.

Ingredients

  • 12 large strawberries
  • 1 cup cream cheese, whipped
  • 2 tbsp. powdered sugar
  • ¼ teaspoon vanilla extract
  • Decorative black and red icing

Preparation

  1. Thoroughly clean and dry the strawberries so that the filling will stay firmly in place.
  2. Cut off and discard the end of the strawberry that has the leaf and stem. Next, cut the strawberry in two, keeping the pointy end big enough to become Santa’s hat.
  3. Set the strawberries aside and prepare the filling: In a small bowl, combine the cream cheese, powdered sugar, and vanilla. Carefully transfer the mixture to a piping bag. If you don’t have one, you can use a Ziploc-style snack bag instead.
  4. Once the strawberries have been cut and the filling prepared, it’s time to assemble the Santas! To do this, place the wide, flat end of the strawberry on a plate. Using the piping bag, pipe the cream cheese mixture on top. This will be Santa’s head and beard; you need to use enough of the filling to have room to decorate his face.
  5. Finish off your Santa by placing his hat (the pointy end of the strawberry) on top of the filling. If you like, put a dot of filling on the tip of the hat to make a white pompom.
  6. Use the decorative icing to draw on Santa’s eyes and nose. Feel free to get creative and come up with a variety of little Santas!

Now that we’ve got a cute squad of Santas, we need a team of reindeer. Our next recipe’s got you covered!

Reindeer Cookies

These adorable reindeer cookies will bring a festive touch to your table and are so much fun to make. With their little red noses and pretzel antlers, they may just be a little too cute to munch on!

Ingredients

  • A package of round, dark-brown cookies (or Oreo-style cookies, without the filling)
  • A bag of small pretzels
  • 16 oz chocolate frosting
  • A box of mini round cookies (like Mini Golden Oreos) for the snout
  • Candy eyes, about 1 cm in diameter
  • Red and green candies (e.g., M&Ms)

Preparation

  1. Spread frosting on two cookies.
  2. Place two pretzels on one of the cookies to create the antlers; the frosting will act as glue.
  3. Place the other cookie on top to make a “sandwich.” This will hold the pretzels in place.
  4. Frost a mini golden cookie to create the snout, then stick it on top of the cookies.
  5. Glue the candy eyes and nose in place with a little frosting. Repeat with all the cookies.

Holiday Truffles

Here’s a delicious way to create truffles that the kids will love . . . and so will you, because with just four ingredients, they couldn’t be easier to make!

Ingredients

  • 30 Oreo-style cookies
  • 200 ml softened cream cheese, at room temperature
  • 300 g melting chocolate
  • Crushed candy canes, for decoration

Preparation

  1. Line a baking sheet with parchment paper.
  2. Pulse the cookies in a food processor to make fine crumbs. Set aside a small amount for decorating.
  3. Gradually add the cream cheese to the bowl of the food processor and blend until you get a smooth, creamy consistency. If the mixture seems too dry or isn’t holding together well, add a little more cream cheese.
  4. Roll small amounts of filling into 2 cm balls. You should get about 24 balls from the mixture.
  5. Carefully arrange the shaped balls on the baking sheet prepared in step 1.
  6. Chill for 15–20 minutes in the refrigerator.
  7. Meanwhile, melt the chocolate. To do this, melt it in a bowl placed over a pot of simmering water, or microwave it in 20-second increments.
  8. Remove the balls from the fridge and dip them in the melted chocolate until completely coated, then place them back on the baking sheet.
  9. While the chocolate coating is still soft and sticky, sprinkle the balls with crushed candy canes or Oreo crumbs.
  10. Once decorated, put the truffles back in the fridge to allow the chocolate to harden. We recommend waiting at least 10 minutes before eating!

Christmas Tree Skewers

To balance out our four sweet offerings, we have a fun recipe for some savoury skewers inspired by the shape of a Christmas tree. They’re a great way to add some Christmas cheer to your child’s lunchbox leading up to the holiday break. Feel free to adapt the recipe as needed by substituting your favourite vegetarian or gluten-free ingredients.

Ingredients (for six skewers)

  • 4 slices of bread
  • 12 slices of ham
  • 8 slices of cheese
  • 6 thick slices of cucumber
  • 4 cherry tomatoes
  • 6 lettuce leaves
  • 2 pieces red bell pepper
  • 6 cocktail skewers
  • 2 star-shaped cookie cutters (one large, one small)

Preparation

  1. Using the large cookie cutter, make 12 stars out of the bread slices.
  2. Using the small cookie cutter, cut out the centre of the cucumber slices.
  3. Stack three slices of ham and cut stars from the stack using the large cookie cutter. Repeat with the remaining ham slices, in stacks of three, to get 12 stars in all.
  4. Repeat step 3 with the cheese slices.
  5. Cut the tomatoes in half and insert a skewer through each piece.
  6. Roll up the lettuce and place on top of the tomato.
  7. Add the bread, ham, and cheese stars to the skewers, alternating to form the points of the tree.
  8. Place the skewer on the large cucumber round, which acts like a tree stand .
  9. Add the small cucumber stars to the top of the skewer.
  10. Finally, use the small cookie cutter to cut out 3 red bell pepper stars and place one on the top of each skewer, like a tree topper !
